V teoretické části podat přehled biogenních aminů vyskytujících se v potravinách, popsat jejich vznik, výskyt, biologická aktivita a metody stanovení. V experimentální části vypracovat elektroforetickou metodu stanovení histaminu. Metodu ověřit na vybraných vzorcích.
In the theoretical part provide an overview of food biogenic amines, to describe their formation, occurrence, biological activity, and methods of their determination. In the experimental part develop electrophoretic method for the determination of histamine. Verifying of the method on a series of the selected food samples.
